Japanese teriyaki sauce from soy sauce, mirin and sake — ready in fifteen minutes
Teriyaki no Tare is the Japanese base sauce that gives grilled food its dark shine and that familiar sweet-salty depth. It takes only a few things — soy sauce, sugar, mirin and sake — and comes together in about fifteen minutes. You can spoon it over grilled or pan-fried food, or use it the other way round, as a short marinade the food sits in before it hits the heat.
Ingredients
- 5 tbspSoy saucebase of the sauce
- 1 tbspSugarbrown sugar in two sources
- 5 tbspMirinsweet rice wine
- 4 tbspSakerice wine; used instead of mirin in one source
- 1 tbspSesame oilstirred in at the end; one source simply calls for oil
- Saltto taste (optional)
Method
- Put the soy sauce and sugar in a small saucepan and stir to combine.
- Bring the mixture briefly to a boil, stirring, until the sugar has completely dissolved.
- Take the pan off the heat and let the sauce cool — it should be lukewarm or cold before the alcohol goes in.
- Stir the mirin and sake and the sesame oil into the cooled sauce until everything is well blended.
- Taste and season with salt if you like; the soy sauce already brings plenty of savoury punch, so go carefully.
- To use it as a marinade, let the food for the grill sit in the sauce for about 15 minutes, then drain it and grill or pan-fry.
Tips and variations
Instead of using mirin and sake side by side, you can stick to one rice-wine component: mirin alone (sweeter), or sake alone. For a simpler route, bring all the ingredients to a boil together and let them simmer gently for 5 minutes rather than stirring the alcohol into the cold sauce — the sauce turns out a little thicker that way. Neutral oil works in place of sesame oil, and brown sugar gives the sauce a rounder sweetness. Serve it either spooned over grilled and pan-fried food, or use it as that short marinade before cooking.
