King oyster mushroom
A large mushroom with a thick, firm white stem and a small cap, meaty and mildly nutty when cooked.
The king oyster mushroom is a relative of the oyster mushroom that is almost all stem; it stays firm and chewy when cooked instead of collapsing. Many supermarkets and farmers' markets carry it, and Asian grocers reliably do.
Substitute:
Oyster mushrooms taste similar but are softer and thinner, so the firm, meaty texture is lost; cremini mushrooms are firmer but taste earthier and release more water.
