Ebi no Tempura
Shrimp in a thin, airy batter, fried golden and crisp in four minutes
40 min·4 servings
Pungent green paste made from grated wasabi root or, far more often, from horseradish with mustard and colouring.
Wasabi paste in tubes is sold in the Asian aisle of many supermarkets and in any Asian grocery; it is usually mostly horseradish, while real wasabi root is only found fresh or frozen at Japanese specialty shops or by mail order. The heat rises into the nose rather than burning the tongue and fades quickly, so the paste is added just before eating.
Freshly grated horseradish with a pinch of hot mustard powder comes very close to the usual tube paste, lacking only the green colour and the subtle, slightly sweet note of real wasabi.
