teriyaki sauce

A glossy, sweet-salty sauce based on soy sauce and mirin, used to glaze meat, fish and tofu.

Bottled teriyaki sauce is on the Asian shelf of most supermarkets, but it is often thick, very sweet and starch-thickened, whereas the Japanese version is thinner and only turns glossy as it reduces in the pan.

Substitute:

It is easy to make yourself from roughly equal parts soy sauce, mirin and sake with a little sugar, and tastes cleaner and less sticky than the bottled kind.
