Shiitake mushrooms

Fresh shiitake are sold in many supermarkets, and dried ones, often even better for broths and braises, are in any Asian grocery.

Caution: Eaten raw or barely cooked, shiitake can cause an itchy, streak-like skin rash in some people, so they should be cooked through.
