Garam masala

An Indian blend of toasted, ground spices such as cumin, coriander, cardamom, cinnamon, clove and pepper, warm and aromatic rather than hot.

Garam masala is sold in the spice aisle of many supermarkets, and reliably and usually fresher in Asian, Indian or Turkish grocers and by mail order. If you cannot find it, you can blend it yourself from ground cumin, coriander, cardamom, cinnamon, clove and black pepper.

Substitute:

Best is a homemade blend of cumin, coriander, cardamom, cinnamon, clove and black pepper. Curry powder is not an equivalent, because it contains turmeric, tastes earthier and turns the dish yellow.
