Ramen
Noodle soup with hot broth, crisp chicken, egg and plenty of vegetables
40 min·4 servings
The fresh leaves and tender stems of the coriander plant, with a strong, lemony, fresh aroma.
Often sold in supermarkets as a potted herb or bunch, though not everywhere; Asian grocers and Turkish or Middle Eastern shops carry it reliably, usually in large, cheaper bunches.
There is no equivalent substitute, because its distinctive aroma cannot be imitated by any other herb; flat-leaf parsley with a little lime zest adds freshness and colour, but the dish will taste noticeably different.
